Minted Lamb Burgers

I was thinking the other day it has been a while since I last had a minted lamb burger. I really like the change to beef, and it's so much better and cheaper just to mix the ingredients together yourself rather than use pre-made burgers.

The recipe for the lamb burgers is really really simple. Your hands get a bit mucky but that's about it. The key to getting a strong taste and smell of mint through the meat is to leave it overnight in the fridge so that the flavours mingle.

How many calories in a 1/4 pound lamb burger? 300 calories per burger (excluding bread)

Ingredients for minted lamb burgers

  • 500 grams of lamb mince
  • 1 onion (small)
  • 1 clove of garlic
  • 2 teaspoons of dried mint
  • 100 grams of fresh bread crumbs
  • an egg, beaten
  • salt and pepper

How to make the minted lamb burger mix

Set up your food processor and make the breadcrumbs from the slices of bread. Finely chop the onions and garlic. Heat some oil in a frying pan and soften the onions. After they've softened add the garlic. Turn off the heat after a couple of minutes.

Put the mince into a mixing bowl that will fit in your fridge. Add the mint, reasonable pinch of salt and a number of grinds of pepper. Add the breadcrumbs and the egg. Once the onion and garlic has cooled enough to touch add this to the the mix. Using your hands mix all the ingredients together thoroughly. Once mixed cover and leave in the fridge overnight for the flavours to mingle. It will then smell just like the ones that you can buy pre-made.

Personally I weigh each burger pattie as I form it. I use 4oz for adults and 2ox for children. Just means they are all the same size and should cook at the same speed. Fry the burger until cooker, being lamb you may not need oil.

I normally make the mix in advance then freeze using an empty drawer in my freezer with a silicone banking sheet. Once frozen they are bagged up and I can then take out only the burgers needed. If they are frozen together in a bag they'll freeze together meaning you'll have to defrost the lot in one go. No use if you only want one burger!
