Yesterday I activated my sourdough starter and I've left it until this morning to start the feeding process.

The feeding process will take me a minimum of seven days until it's ready to use to make my first sourdough loaf. As you see there is a lot of activity on top of the mixture. I'm taking this as a good sign. It looks similar to when one activates dried yeast in warm water for standard bread. The smell is different though.

Now, for the next week or so I'm going to remove half the mixture and replace it with 8oz (226 grams) of fresh strong bread flour and enough water to maintain the sloppy porridge consistency. Once I'm using the starter I will still have to feed it daily.

I've put a daily reminder into my phone's diary on case I forget, I don't want to start again. I'll report back towards the end of this stage to let you know how I'm getting on.
